Robata grilled chicken breast with green chilli and miso with chimichurri dipping sauce

Nanjing shredded lamb bao’s with shiso leaf, mandarin cucumber, kimchi, sesame and shoyu dressing

Prawn tempura hand roll with green mango and smoked chilli mayonnaise

Choose one main course:

Miso ramen with sliced pork belly, soft boiled egg, nori, egg noodles and chilli oil

Chicken katsu donburi, egg, red miso, togarashi and katsuobushi

SHUGO KOKADO started his career as a chef when he was 16. Executive sushi chef at Buddha Bellies Cooking School, also works as a Sushi consultant, a private chef (mainly overseas). Experienced and acquired skills as Sushi and Kappo Chef in high-grade restaurants in Osaka.

The Mastermind

AYUKO KOKADO is a founder of Buddha Bellies Cooking School and an author of ‘Teaching Japanese Cooking in English’. She’s a professional sushi instructors certificated by JSIA (Japan Sushi Instructor Association) and a professional Sake sommelier registered by SSI international. She has been trained as a professional cook by one of the famous Japanese Kaiseki style cuisine (traditional Japanese Fine dining style) schools: Yanagihara Cuisinary School in Japan
