WILL MEYRICK’S CANGGU COOKING CLASS

WHAT ARE WE COOKING?
A deeper taste of the archipelago
Real dishes, rooted in memory and made by hand. From the coast of Karangasem to family kitchens in the hills, these recipes carry stories, not just flavour. You’ll prep them, cook them, and eat them the way they’re meant to be — fresh, bold, and shared.

Karangasem Prawn Curry
This one comes straight from the east — simple, coastal, and full of soul. Fresh prawns, slow-cooked in a spice paste that’s all about balance, with coconut milk tying it all together. It’s the kind of curry you find in small kitchens near the sea, where no one measures, but everything tastes right.

Chicken or Duck Satay Lilit
This isn’t your standard satay. Lilit means to wrap — and here, we’re binding spiced minced meat around lemongrass or bamboo, then grilling it over fire. Whether you go with duck or chicken, the base is the same: herbs, coconut, and a spice paste that pulls everything together. It’s street food, temple food, and home food — all rolled into one.

Balinese Lawar
A dish that speaks of the land — young vegetables, grated coconut, and spices mixed by hand. It’s made fresh, eaten fast, and always rooted in ceremony. You’ll feel the texture, smell the earthiness, and understand why it’s more than just a side on a Balinese table.

Sambals
Sambal isn’t just something on the side — it’s the heartbeat of the meal. You’ll make three: sambal matah, raw and vibrant with lemongrass and shallots; sambal belacan, deep and smoky from toasted shrimp paste; and sambel kecap manis, sweet, sticky, and cut with just enough chili. Each one is mixed by hand, matched to the dishes, and made to be part of every bite.
NUSANTARA COOKING CLASS
A deeper taste of the archipelago
MONDAY TO FRIDAY | MORNING OR AFTERNOON

Some dishes stay with you — not because they’re fancy, but because they carry something honest. This class is about those dishes. You’ll cook six recipes drawn from across the islands, using techniques that haven’t changed in generations. It’s personal, it’s hands-on, and you’ll leave with more than just a full stomach.
Price: IDR 1.300K / person
Minimum 2 people – private group only
What You’ll Cook
Pork meat satay
Karangasem prawn curry
Balinese lawar
Sambal belacan
Sambal matah
Sambal kecap manis
The Program
🕙 10:00 AM or 3:00 PM – You’ll arrive at our garden kitchen in Canggu, greeted with a welcome drink and a short walk through the garden where we source some of our ingredients.
🔪 Prep Time – We roll up sleeves and get to work. You’ll make everything from scratch — spice pastes, marinades, and sambals — using traditional tools and techniques. This isn’t a watch-and-learn session; you’re doing the chopping, the pounding, and the tasting.
🔥 Cooking Session – With everything prepped, we move to the fire. Each dish is cooked step by step, with stories and shortcuts that don’t show up in cookbooks.
🍽️ Sit Down Meal – After all that effort, we sit together and eat. It’s a proper meal, not just a tasting. And it’s all yours.
🚐 Return Transfer – Once you’ve had your fill, we’ll arrange your drop-off back to Seminyak, Canggu, Brawa or Pererenan.

🔪 Get Into It – You’ll start prepping straight away. From grating coconut to pounding spices, this part is hands-on and full of small details that make a big difference.
