Alongside Hujan Locale, Honey & Smoke, Billy Ho in Bali, and Will St. in Perth, 2-star award in the Top 100 WA Good Food Guide, his establishments are a testament to his relentless pursuit of culinary excellence and his devotion to uncovering the most authentic flavours from the heart of local markets and kitchens.

Billy Ho

Billy Ho is an Asian Boteco located at the south end of Batu Bolong, offering a distinct Asian edge of authentic flavours of small and large plates to share, creative cocktails and a refreshing wine list.

HONEY & SMOKE

At Honey and Smoke, the chargrill is the hero. “Cooking with charcoal or wood fire just creates a much better flavour. It’s a really natural thing for us to install here in Ubud. Our food is blessed by the fire”

HUJAN LOCALE

Hujan Locale offers a vast array of Indonesian dishes based on the specificity of Indonesian ingredients, but the menu is open to other food cultures. The concept is based on the ascertainment that, during the pandemic, people were way more focused on how they eat, how it’s made and how to do it themselves.

MAMA SAN

Step into Mama San Bali, a modern Asian-inspired restaurant & supper club that has become a destination spot in Seminyak, Bali. The Mama San interior is the first thing you’ll take notice to, with plush green banquette seating, walls of dark timber, ample mirrors and a scattering of chandeliers.

The Dining Room’s menu has undergone a similar refresh, seamlessly melding street food flavours with a more refined dining experience, created by Chef Will Meyrick. Exclusive events are welcomed by this intimate space and group dining celebrations are like no other in our vibrant supper club.

Will St. is all about real food, real ingredients, and real people and takes what’s best from Western Australia’s farms and waters and give it an Asian twist. No fuss, just good food that tells its own story.

Will St. serves as a platform to showcase the best of what Western Australia has to offer. Through Will Meyrick’s role as a brand ambassador, the restaurant actively promotes local products.
