Some collaborations are plotted on paper. NOM NOM Vol.14 happened because two chefs kept circling the same flavours, the same late-night cravings, the same Tokyo discipline, and eventually met in the middle. Billy Ho X TABU brought Will Meyrick’s backstreet Japan influence and Bali-born momentum together with Hayden Taylor’s sharp technique, shaped in some of Australia’s best kitchens and refined in Bali. The result was a one-night menu built on shared instincts: clean cuts, bold heat, deep broths, and that push and pull between precision and play that defines both chefs when they cook at their best.

BUZO by Will Meyrick in Seminyak hosted an intimate culinary collaboration with Chef Armen of Terra Verte that celebrates instinctive cooking and the dialogue between cultures. The evening brings together flavours from Terra Verte restaurant at Equipoise Ubud, and BUZO, known for redefining Itameshi – a fusion of Japanese precision and Italian soul.
