NOM NOM Vol.14 happened because two chefs kept circling the same flavours, the same late-night cravings, the same Tokyo discipline, and eventually met in the middle. Billy Ho X TABU brought Will Meyrick’s backstreet Japan influence and Bali-born momentum together with Hayden Taylor’s sharp technique, shaped in some of Australia’s best kitchens and refined in Bali. The result was a one-night menu built on shared instincts: clean cuts, bold heat, deep broths, and that push and pull between precision and play that defines both chefs when they cook at their best.
