Ancient duck “tom kha bpet”

Som Chai, my Thai restaurant in Bali, tells cultural stories through recipes: coming from the late 19th Century to the table, here is a short story of the “Tom Kha Bpet”

It was a soup…

Tom Kha is originally a type of soup consisting of a spicy chicken-curry in coconut milk. 

The soup typically includes coconut milk, galangal, kaffir lime leaves, lemongrass, Thai chili peppers, coriander (or dill weed), straw mushrooms (or shiitake or other mushrooms), chicken, fish sauce, and lime juice. Fried chilies are sometimes added.

… but in the late 19th Century, it was not anymore !

In the late 19th century, “tom kha” was not a soup at all: it was a dish of chicken or duck simmered in a light coconut broth with a generous amount of galangal. The coconut broth adds sweetness to the meat, and the galangal helped to mellow the meat odor. It was then served with a basic roasted chili jam as a dipping relish seasoned along the salty-sour-sweet spectrum.

AYUKO KOKADO is a founder of Buddha Bellies Cooking School and an author of ‘Teaching Japanese Cooking in English’. She’s a professional sushi instructors certificated by JSIA (Japan Sushi Instructor Association) and a professional Sake sommelier registered by SSI international. She has been trained as a professional cook by one of the famous Japanese Kaiseki style cuisine (traditional Japanese Fine dining style) schools: Yanagihara Cuisinary School in Japan

This is the first Charity Lunch we have decided to create for you. We would love to share the work we do, for the children to perform (oh yes, they will be there to share their wonderful balinese dancing skills!) and show you their amazing capacity to learn and to have endless joy in their hearts.

We would love for you to collaborate, to learn to join in in our goals for the future of these beautiful children and the center. MTC – Matahari Terbit Center is a home away from home, a school surrounded by love and care by volunteer therapists, teachers, as well as people who simply want to share their time with the children.

We are a non-profit organization created to enhance the daily lives of children and families  affected by physical and mental disabilities. As a School and Rehabilitation center we continually expand our programs to strengthen all aspects of mind body and soul in the healing process, as well as to improve and increase the children’s independence, providing them with a better quality of life. We also provide a lot of support to the parents.
